Hello, our names are Isabelle and Richard Flannery and we are co-owners of Highland Charcuterie and Smoke House Ltd.

In 2004 Isabelle started making Charcuterie, as back then it was nearly impossible to buy good quality cured meats.  

All the Charcuterie we produced was used in our hotel's restaurant but in winter, when the hotel was closed, we sold it at local Christmas Markets and it proved very popular.

In 2014 Highland Charcuterie and Smoke House Ltd was established and in 2016 we sold the hotel and moved to our present location in Oldshoremore and started producing our range of products full time.

We buy all our meat from highland producers, All of our pork comes from Tessa Dorrian from Elphin in Sutherland, all the pigs are free range rare breeds. Our other supplier for pork is " Macbeths Butchers" in Forres, again free range pigs and we source locally our Scottish Beef.

The wild vension and pheasant breasts come from "The Ardgay game factory" in Ardgay. All the meat is seamed cut and hand trimmed by ourselves. We forage as many of the other ingredients as possible from the local area, such as Chanterelles, bog myrtle, gorse flowers, Rowan Berries, blackcurrants, seaweed and wild garlic.

ALL our products are GLUTEN FREE, not because we are trying to follow a trend but because we don't see the need to add any rusk or fillers to any sausages and since we are talking about allergens, please note that lactose is present in the cheese...! and the country pates contain cream as well as eggs. As time goes by we will undoubtedly be adding more products to this list. All the products are hand made by Isabelle and Richard in their purpose built sites at:
